GrillMaster {Ha!}

We try to eat low-carb, gluten, sugar, and dairy free. ((It's our personal brand of healthiness;)) Sometimes, though, you just just get, well....hungry. Lasagna is one of those warm, Italian comfort foods that you just miss. Plain and simple.

So we tried a substitute - lasagna with zucchini in place of noodles. (Don't gag - it's not as bad as it sounds.) Problem was, it always turned out really watery. A friend of ours fixed this by grilling the zucchini "noodles"  to dehydrate them. I decided to try it.





First, I sliced the zucchini reeeeeeeeeeeally thin with the mandolin. 


Then, I stuck it on the grill and waited for the magic to happen.

And it wasn't hot enough.

So Dad sidled over and, like the grill master he is, easily fixed the coals for me.

Then he rubbed charcoal all over my face.

Still, I didn't think it was going very well. The zucchini strips just shriveled into slimy little strips and didn't accumulate much color at all - annnnnnnnnndddddd iiiiiiiiiiiitttt waaaaaaaaas taaaaaaaakiiiiiiiing foooooooooorrrrrr----evvvvverrruuuuuhhh. Instead of mastering the grill, it mastered me. Humbug.

So, I packed up the whole kit and kaboodle and marched back into my territory. Gotta love the kitchen - I broiled those zucchini strips in the oven.  Between the two methods, something must have worked, because everybody loved the "lasagna" at church the next day.

That's a really interesting idea, sorry it didn't work. At least you got some fun pictures out of your grill adventure! ;)

Hey Anna!
We've also used zucchini as a substitute for lasagna noodles but - we've found that eggplant tends to be less of a "watery" substitute...:)

I'll have to try the eggplant - sounds like a good substitute!
