How To: Can Green Beans - a late post

How TO: Can Green Beans

·       Start a stockpot of water boiling.

·       Wash and snap the beans.

·       Put the beans into jars and add a tsp. of salt. (Any salt will do.)

·       Pour the hot water from the stockpot into your jars of beans and then dump the rest of it into your canner.

·       Wash rims of jars.

·       Put lids and rings on your jars and put them into the canner.

·       Cover jars with water.

·       Close the lid on the canner and let the contents cook on high until the pressure gauge reaches 15 lbs. pressure or your doo-hicky starts to jiggle back and forth.

·       Keep at 15 lbs. pressure for 25 minutes.

·       Turn off the stove burner and allow pressure to fall to 0. DO NOT OPEN BEFORE PRESSURE REACHES 0!!! Open canner and remove jars.

·       Place jars on a towel on the counter to seal.   (You will hear a soft “ping” as they seal.

·       Wipe jars, date and place in dark, cool pantry or basement.
